For the Apple-Plum-Physalis Schmarren, first prepare the vanilla sauce.

For the custard, bring the vanilla pulp and pod to the boil with the milk. Allow to cool and remove the pod from the milk.

Mix the yolks, egg, vanilla sugar and honey with the vanilla milk and bring to the boil, stirring constantly, then put away immediately.

For the pancake, dice the fruit. Beat the egg whites with a pinch of salt until stiff. Mix the flour with the milk until a smooth dough is formed, then add the yolks, aniseed and cinnamon.

Do not stir too much or the dough will be tough. Fold in the snow and stir in the fruit. Pour batter about finger thick into a greased non-stick pan and bake slowly on both sides.

Divide with a fork, sprinkle with powdered sugar and serve the apple-plum-physalis Schmarren with the vanilla sauce.
