Wash and coarsely chop the water spinach. Coarsely chop the garlic cloves. Cut open chili pepper and chop to taste, removing the seeds or leaving them on the pepper, depending on your preference for spiciness.
Heat oil. Briefly sauté garlic cloves and chili peppers until hot. Add water spinach and sauté for about 2 minutes, also hot. Finally, deglaze with soy sauce.
