Squeeze the lime and mix the juice with salt, pepper and sugar until the salt has dissolved. Whip the whipped cream until very stiff and fold in loosely. Cut the lemon balm leaves into thin strips and fold into the dressing with the neatly mixed yogurt.

Goes neatly with salads with fruit, crayfish tails or possibly fish, with leaf and vegetable salads and quite exceptionally neatly with chicory, celery and fennel.

Tip: Use yes as needed a normal or light yogurt!
