Our tip: With fennel, always use the tender fennel green, it gives the food a wonderful aroma!
Put the mixed flour in a suitable bowl and press a hollow in the middle. Put all the ingredients in the hollow form and knead with the milk to form an elastic dough. Rest the dough for 1 hour, briefly work it repeatedly on a floured surface, divide it into pieces of any size on the spot, form round balls and roll out each piece into a round, thin patty. Place the patties on the baking sheet sprinkled with bran, prick them through and through with a fork and bake in a heated oven at 160 °C. The patties should not turn brown.
