Cut roll roast from the butcher. Stir a tsp. of salt, thyme and mustard, coat one side of the meat with it, press the sausage out of the skin and spread it evenly on top. Roll up meat, tie with spaghetti or cotton thread. Sprinkle with remaining salt and pepper. Roast on the broiler with the fat pan pushed underneath in the heated oven at 220 °C for 90-100 minutes. Brush frequently with the dripped fat, turn to the other side after half the cooking time. Serve garnished with spicy vegetables, rustic bread, rolls, pretzels, etc., mustard and horseradish or puszta sauce (bought ready-made).

Tip: You can also cook the roast the day before and bring it cooled to the table on the evening of the party.
