For the truffles, melt the chocolate in a bain-marie with the whipped cream and mix well. Then chill in the refrigerator for one hour.

Then form as round as possible portions from the mass with two spoons and place on a plate. Leave to rest in the refrigerator for two hours.

Now shape each small portion with your hands as round as possible, then roll in the cocoa and chill again. Serve the truffles cold.
