For the elderberry chutney, remove the elderberries from the cones with a fork into a wide saucepan. Crush the pepper and mustard seeds in a mortar.

Put all the ingredients in a saucepan and cook over medium heat for about an hour. Pour the hot elderberry chutney into twist-off jars and seal quickly and tightly.
