For the spelt-curd bread, preheat the oven to 160 degrees convection. Mix all ingredients (except the coconut oil) in a bowl.

Grease the loaf pan with the tablespoon of coconut oil and then pour the mixture into it. Spread until smooth. Bake for 40-60 minutes.

After 40 minutes, do the needle test, if mixture is still sticking to the needle, bake for another 5-10. After baking, remove from the pan as soon as possible.
