For the pork roulades, pound the cutlets and season with salt, pepper and caraway seeds.

Cover the cutlets with 2 pieces of ham, carrots cut into noodles and gherkins, roll them up and fix them with a toothpick. Fry well on all sides in a pan and take out again.

Fry the chopped onion and mushrooms in the pan and add water.

Add the pork roulades back into the sauce and sauté until tender.

Arrange the roulades on plates with the mushroom sauce and enjoy hot.
