Rub the meat heartily with salt and freshly ground pepper and brown well in the oil or lard. Pour 375 ml of water and stew with the lid closed.
Peel the pears and potatoes and cut them into pieces. Add the pears to the meat after 60 minutes, the potatoes 10 minutes later.
Season with salt, pepper and caraway. Once everything is cooked together, bake in the oven uncovered.
The finished dish is served in the roasting pan.
