Instructions:

Prepare the yeast dough as described. For the carnival doughnut, form the dough into a roll, cut it into small pieces and grind (shape) them into small balls on the work surface with the flat of your hand. Place dough balls on a floured board, cover with a cloth and let rise in a warm place. Heat the fat. Place dough pieces, curved side down, in fat and bake, covered, for about 3 minutes. Remove cover, turn doughnuts over and finish baking to golden brown. Lift out doughnuts, drain on paper towels and let cool. Flavor apricot jam with a little rum, place in piping bag (with special doughnut nozzle) and fill doughnuts with it. Sprinkle with powdered sugar.
