For the chestnut chocolate confection – if using chestnuts from the packet – finely grind chestnuts to a paste in a food processor or defrost chestnut puree.
Melt the couverture or other chocolate over a water bath. Blend all ingredients to a paste using a blender and then pour into a piping bag.
Squirt a small amount into each confection and refrigerate the chestnut chocolate confection for at least 2 hours.
