For the beef stew, cut the onion into fine strips. Clean and finely dice the celery. Cut meat into 4 x 2 cm pieces, season with pepper and salt. Heat oil in a roasting pan.

Brown the pieces of meat in 2-3 portions on all sides and take out again. Fry onion strips and celery cubes in it until light brown.

Stir in the tomato paste, add the red wine and let it boil down. Add the meat and herbs to the roasting pan and pour in the broth.

Put the lid on and cook in a preheated oven at 180 °C on the bottom rack for about 2 hours. Take out the pieces of meat. Strain the sauce and vegetables through a sieve into a pot.

Bring the sauce to the boil and season with salt and pepper. Mix the starch and some cold water and thicken slightly with it. Put the meat into the sauce and warm it up again. Serve the beef stew sprinkled with parsley.
