For the banana-ginger soup, mash or puree the bananas and stir through with a sauce of sugar, milk and grated ginger. Arrange in a deep dish.

Cut out balls from the flesh of the dragon fruit with an ice cream scoop, marinate with sugar, honey and Calvados. Place the balls in the soup and serve the banana-ginger soup garnished with a mint leaf.
